10oz Chicken breast
2 whole egg beaten
1/4 cup flour
1/4 cup Panko bread crumb
1/4 cup Pecorino Romano Cheese
1 oz vegetable oil
1/2oz chopped shallots
2oz salted butter
2oz sliced mushrooms
1/2 cup sweet Marsala wine
1/2 cup Demi Glaze sauce or (veal base)
1/2 cup Chicken stock
2oz spinach
2oz fresh mozzarella
dust chicken breast with flour the dip in the eggs then bread crumbs, pan sear chicken breast in the oil and set aside in the same pan add shallots, butter, mushrooms let cook for a minute or two, add back the chicken then add Marsala wine demi glaze sauce, chicken stock salt & pepper to taste let simmer for 5 minutes or when sauce thickens. Place chicken in an oven able pan, top with Fresh mozzarella place in a 350˚ oven until cheese melts place chicken on plate and top with sauce.
